Ingredients

  • 500g Whitworths mixed dried fruit
  • 200g sugar
  • 300ml hot tea
  • 1 Egg
  • 500g Self raising flour
  • 1/2 tsp mixed spice
  • 1/2 tsp grated nutmeg
  • 2 tbsp marmalade

Method

  • 1. Put sugar and fruit in a mixing bowl, add the hot tea and leave to soak overnight.
  • 2. Next day set oven to 150 degrees C.
  • 3. Stir egg, flour, spices and marmalade into the tea, sugar and fruit mixture.
  • 4. Grease and line 2 x 500g loaf tins and add half the mixture to each. Bake for one and a half to two hours until a skewer pushed into the cake comes out clean.
